When a book called The Christmas Cookie Collection crosses our desks, you can bet we need to know more. Like: Where are these cookies? Can we have some? Please? Alas, we haven't yet perfected our Screen-to-Cookie Delivery System, so today we've got the next best thing, a cookie recipe from cookie genius Lori Wilde, to celebrate her new release, which includes four previously released novellas, telling the stories of The First Love Cookie Club. Lori Wilde’s Sugar Plum Cookies
1/2 cup solid coconut oil
1/2 cup granulated sugar (plus a little extra to roll cookie dough in)
1/2 cup light brown sugar, packed
1 large egg
3 tablespoons sour cream
1 tablespoon vanilla extract
1-¾ cup all-purpose flour
¾ tsp baking soda
1/4 teaspoon salt
1 cup diced dried plums
½ cup white chocolate chips
½ cup chopped walnuts
Preheat oven to 350 degrees. In a bowl, whisk together the flour and baking soda; set aside. In a separate bowl combine the coconut oil with both sugars; beat on medium speed until well combined. Reduce speed to low; add the salt, vanilla, sour cream and egg. Beat until well mixed, about 1 minute. Add flour mixture; mix until just combined. Stir in the plums, white chocolate chips and chopped walnuts.
Create a tablespoon-size ball of dough and lightly roll in granulated sugar. Drop cookies onto ungreased baking sheets about 2 inches apart.
Bake 8 to 10 minutes. Remove from oven, and let cool on baking sheet. Transfer to a wire rack, and let cool completely.
